Ivanovic's tuna, tomato & sweetcorn rice salad
Preparation& cooking time: 10 mins
450g packetof 2-minute brown rice
325g tin ofsweetcorn (salt and sugar free)
185g tunain oil2 springonions, chopped
250g cherrytomatoes, halved
Handful offresh basil or parsley, finely chopped
1.Microwavethe rice according to the packet’s instructions. (Make sure you use a microwave-proof dish!)
2.Oncethe rice is cooked, place in a large dish and leave to cool for a few minutes.
3.Chopup the spring onions and tomatoes and add to the rice along with the drainedsweetcorn.
4.Openthe can of tuna and pour the entire contents (including the oil) into the ricedish.
5.Addthe herbs and seasoning and mix together.
