packs a tupperware box of his couscous surprise for a healthy but delicious
lunch-on-the-go. Its slow-release energy means he’s able to run around the pitch all afternoon! He also enjoys eating it alongside
a piece of grilled chicken or fish for dinner.
195g tin of
1/3 of a
Italian or French dressing
150ml of boiling water (get help from an adult for this) into a measuring jug
and crumble in the stock cube. Stir to dissolve.
the couscous into a mixing bowl, pour in the stock and cover the bowl with cling
film. Leave for 5 minutes until the stock has absorbed. Peel off the cling film
and stir the couscous with a fork.
the cucumber and tomato into smallish pieces and add to the couscous, along
with the olives, sweetcorn and feta.
the dressing and mix together.
