Couscous surprise

Serves: 2
Preparation time: 15 minutes  

JT often packs a tupperware box of his couscous surprise for a healthy but delicious lunch-on-the-go. Its slow-release energy means he’s able to run around the pitch all afternoon! He also enjoys eating it alongside a piece of grilled chicken or fish for dinner.  

Ingredients:  
1 vegetable stock cube
150ml boiling water
125g dried couscous
1 tomato
195g tin of sweetcorn, drained
1/3 of a cucumber
8 pitted olives, halved
100g feta cheese, crumbled
2 tbsp Italian or French dressing  

Directions:  
1. Pour 150ml of boiling water (get help from an adult for this) into a measuring jug and crumble in the stock cube. Stir to dissolve.
2. Put the couscous into a mixing bowl, pour in the stock and cover the bowl with cling film. Leave for 5 minutes until the stock has absorbed. Peel off the cling film and stir the couscous with a fork.
3. Cut the cucumber and tomato into smallish pieces and add to the couscous, along with the olives, sweetcorn and feta.
4. Add the dressing and mix together.
